Born in Aurillac, Central France, Chef Mathias' culinary journey began at the prestigious Hospitality School in La Rochelle. His passion for flavour and technique led him to Germany, where he refined his skills in several renowned Michelin-starred restaurants across Bavaria.
In 2012, he returned to France and joined a leading hotel in Lyon as part of its opening team, mastering French regional cuisine as a sous chef. His talent propelled him to the Côte d’Azur, where in 2016 he opened his first Golden Tulip kitchen as Head Chef.
By 2018, Chef Mathias took the helm in Bordeaux, driving a signature blend of gourmet creativity and modern French innovation—earning recognition for his original, beautifully balanced dishes.
