Born in the food capital of the East, The place where most of the intellectual stalwarts hail from, Kolkata the city of joy, Santanu Brahmachary carved his way into the world of unparalleled hospitality. Inspired by his mother and granny, Santanu Brahmachary learnt the essence of cooking with passion and sincerity. His mother taught him the very essence of cooking lies in the freshness of the ingredients! From hereon, he mastered the art of culinary tapestry by implementing his minimalistic approach to cooking. Like a wizard is a master of spells, he is the master of gourmet magic! His first experience in the industry taught him French elegance. Akin to a Shayari, he drowned in the indulgent flavours of the Louvre-kissed French cuisine. Santanu, right from the start of his career was excellent when it came to crafting aesthetic and eye candy dishes, a speciality only a few in the world can master!
He brought a brilliant idea to life by unravelling the elements of Caesar salad. His personalized approach towards this dish is well recognized and appreciated by thousands of guests! Be it crisp romaine lettuce or the depth of anchovies, richness of parmesan or zest of lemon, He believes that every component of the Caesar salad is to be savoured at their very own essence. Revitalizing the Caesar salad was just one of the many applaudable achievements Santanu Brahmachary led throughout his career in culinary arts. Having a beam of Bengal seeded in his soul, his favourite dish is the Kosha Mangsho, a slow-cooked, aromatic and luscious mutton curry infused with the sensational earthy quintessence of woodfire. Santanu says "Kosha Mangsho is the symphony of tender mutton embracing the touch of velvety mustard oil, caramelized onions and exotic spices. Each bite whispers culinary tales of Kolkata's bustling kitchens. Kosha Mangsho is nostalgia served on a plate, best served with puffy luchis and a heart full of stories!"
He owes his allegiance to one of his mentors, a connoisseur in culinary arts, the man who not only identified the zeal and zest but also motivated him by entrusting the responsibility of enticing the taste buds of the then emir of Doha. Santanu marks his career graph with such triumphs. He believes in incorporating the theory of mental mise-en-place, meaning, that organization starts in the mind before it reaches the kitchen. For him, ingredients are sacred artifacts where each spice is measured with finesse, every cut of meat cradled with devotion and every herb added with utmost poetic infusion. "Food is not just sustenance but a narrative, where every ingredient carries a story of its origin, its journey and its purpose." says Santanu Brahmachary.
